In Japanese kitchens, the kiritsuke was the head chef's knife: one blade trusted to do the work of two. The angled tip and long, flat edge make slicing and push cuts feel almost effortless once you get used to the shape.

Forged from 67 layers of Damascus steel around a Japanese AUS-10 core, with a handle in African Rosewood that darkens a little with every wash. This is the knife for people who already have a chef's knife they like and want the next step up.

Care

Wash by hand and dry it before putting it away. That's the one habit that matters; everything else is normal kitchen sense. A few passes on a honing rod before cooking brings the edge back if it starts to feel less sharp.
