In Japanese kitchens, the kiritsuke was the head chef's knife: one blade trusted to do the work of two. The angled tip and long, flat edge make slicing and push cuts feel almost effortless once you get used to the shape.

Made from 67 layers of Damascus steel around an AUS-10 core, with a handle in natural African Mkuruti wood that darkens a little with every wash. This is the knife for people who already have a chef's knife they like and want the next step up.

  • Blade: 21 cm (8.3 in), 67-layer Damascus steel, AUS-10 core
  • Total length: 35.5 cm, weight 213 g
  • Handle: Natural African Mkuruti Wood
  • Arrives sharp, engraved on the left face of the blade, in a magnetic-closure gift box

Specifications

67-layer Damascus steel, AUS-10 core. Handle in natural African Mkuruti wood. Engraved with a small Asiro mark on the left face of the blade only. Arrives in a magnetic-closure gift box.

Care

Wash by hand and dry it before putting it away. That's the one habit that matters; everything else is normal kitchen sense. A few passes on a honing rod before cooking brings the edge back if it starts to feel less sharp.

Shipping and returns

Free shipping within the Netherlands, dispatched in 1 to 2 business days. You have 14 days to return it; you cover return shipping, and a used knife is refunded minus a deduction for any diminished value.

What you notice when you cook, next to the stainless knife most kitchens already have.

Edge retention Harder steel holds its edge longer between sharpenings.
60 ±2 HRC hardness
